Quinoa

One trick to cooking quinoa is to pre-wash it. You should soak it for a few minutes and then rinse it in a colander.  Doing this makes it taste less nutty. I boil the quinoa in a home made veggie broth (meat free). You can always cook it in chicken stock.

  1. Rinse quinoa
  2. Warm an 8 qt pan (you need a cover).
  3. Add olive oil and heat slightly
  4. Sautee onion and garlic until clear. Careful not to burn.
  5. Add in parsley and quinoa.
  6. Toast quinoa - you will hear it sizzle and pop. It will become aromatic.
  7. Add water and salt/pepper the water to your taste. Bring to boil and cover. Then simmer on low for 12 minutes.
  8. After 12 minutes, turn off stovetop and let sit covered for 10 minutes.
  9. Fluff with fork before serving.
